Fairport, NY - Casa Larga's Fiori Vidal Blanc Ice Wine will be featured in pairing seminars at the 2016 Food & Wine Classic in Aspen, Colorado. The Food & Wine Classic is the preeminent food & wine festival in the U.S. and one of the top in the world. The festival has been sold out for several months, and includes presentations by celebrity chefs as well as the most recent winner of the Bravo Network's hit television series "Top Chef." The ice wine, produced in Fairport, NY in the traditional German eiswein method, will be part of a cheese and wine pairing seminar. "American Cheese: East vs. West" will be presented at 10:00 a.m. on June 17 and 18 by Laura Werlin. Werlin is one of the country's foremost authorities on cheese and has presented sold out seminars for the past 11 years at the Food & Wine Classic. Traditional ice wines produced at Casa Larga Vineyards are made by leaving grapes on the vine through the winter months to freeze. Because harvesting is dictated by Mother Nature, the harvest often occurs on short notice in late December or early January. The frozen grapes must be picked and pressed within hours of the first sustained freeze. This natural process of freezing is a high-risk, high-reward undertaking. Freezing reduces the amount of water in the grapes, producing a sweeter, more concentrated juice when they are pressed.
