Farmers who sell pre-cut squashes to grocery stores have tons of seeds as waste. Stony Brook Whole Hearted Foods roasts and presses the seeds into a variety of oils, snack seeds, and protein powders.

Stony Brook Whole Hearted Foods is one of the Geneva innovators profiled in our latest exhibit. Their story is part of Geneva’s rich and diverse history. Whether it is through programs, exhibits, collections, or online content, we tell Geneva’s stories.
